Lemon? I think more like a Urine smell, but everyone's sensor's are different. The process of cleaning, properly, will eliminate the "aroma" and the final cooking will douse it all together. If not, just take one small 4oz glass of tequila, throw that back, then eat your fried shark.
After I clean a bonnethead and cut the steaks I soak them in ice cold salt water for 10 to 15 minutes before I rinse and freeze.
You are not allowed to throw shark waste in the water, it should be buried. When I say, Not Allowed, I mean It Is Not Legal. As some of the guys will attest, shark waste in the water attracts sharks. Big Lemony ones, as I recall. You may not Chum for sharks from the beach either, so if you are throwing your shark guts back in the water you may be double fined. Personally, I think you should be, I like to swim in the trough, alone and have learned to never swim down current from shark fisherman. It is all about good stewardship and ediquitte. IMHO ( Humble? HAHAHAH, who am I kidding)
