I like to saok my fillets in salty ice water for 15 minutes then rinse.  The salt brings out some of the adreniline, you'll notice s slime on the flesh that washes right off.  Then zip lock bag in a tupper ware with ice in the frig.  Teriyaki sause and olive oil on the grill is also good.  Cut them up in cubes and add thenm to a gumbo is a great way to enjoy them also, like Noel said don't over cook..

 On the last 2 sharks that I have taken , 1 was a dusky and the other a large bonnethead,  There was a  taste of lemon in both. 

Both were cleaned as described upon landing, as in still moving when buried in ice,. Not being very fond of lemon on seafood, is there a way to avoid this?

I had noticed this same taste from a store bought shark steak that I tried some years ago


Sometimes life requires you just say.....Foget It, I'm Going Fishing.....I just wish I could more often.

 I've tasted that same lemon taste on a nurse shark... I thought it was good, as the meat reminded me of *lobster*!  :-)

If does have a firmness like lobster. In the past I've described it as "tender like a well prepared pork chop." 


Even if you don't catch fish you're still at the beach. It's a Win Win!

Lemon?  I think more like a Urine smell, but everyone's sensor's are different. The process of cleaning, properly, will eliminate the "aroma" and the final cooking will douse it all together.  If not, just take one small 4oz glass of tequila, throw that back, then eat your fried shark. 

After I clean a bonnethead and cut the steaks I soak them in ice cold salt water for 10 to 15 minutes before I rinse and freeze. 

You are not allowed to throw shark waste in the water, it should be buried.  When I say, Not Allowed, I mean It Is Not Legal.    As some of the guys will attest, shark waste in the water attracts sharks.  Big Lemony ones, as I recall.  You may not Chum for sharks from the beach either, so if you are throwing your shark guts back in the water  you may be double fined.  Personally, I think you should be, I like to swim in the trough, alone and have learned to never swim down current from shark fisherman.  It is all about good stewardship and ediquitte.  IMHO ( Humble?  HAHAHAH, who am I kidding)
