Eating Shark  (N/A)

I've harvested about 8 sharks over the past two years.  Two small blacktips around 3' were both excellent table fare.  The majority of the bonnetheads have been excellent.  I've noticed that some of the sharks, including last week's sharpnose had a more of a membrany, tough texture after pulling them off the grill.  I'm pretty much preparing all the fish the same.  I'm wondering if this might be a male, female thing or time of the year thing, etc.  Anyone else notice this?  I'd rather release the fish back to the ocean if I can identify this issue up front.

Gary, The problem you having could be two fold. First is that you may have cooked it to long.Shark is unlike most fish that fall apart the more you cook it. Shark actually gets tougher the more you cook it. If you cook it to the correct doneness it should have the texture of a very tender pork chop. The other cause maybe the way you've sliced it. I'll show you that at the meeting Monday.

As a side note; After years of hearing about this I tried it. When frying shark McNuggets soak the pieces in milk or buttermilk. I did it for four hours but the directions I've read said overnight. After soaking I rolled them in my favorite breading and into the deep fryer. I did 2lbs the old way and 2lbs the new milk way. All of my guest agreed that the milk way tasted better. Soooooo, you can teach old dogs new tricks. Noel 


Even if you don't catch fish you're still at the beach. It's a Win Win!

Thanks Noel.  Probably overcooked it, I was using a different grill than I'm used to.  Look forward to the slicing tip tomorrow.  BTW, landed a few BH's today at LTI and my friends and I saw sharks on different occasions swimming the first gut (4 - 5 footers was our estimate).  One was less than five feet from shore.  Couldn't get a hookup except for BH's.  Was trying to catch some ladyfish but did not have any luck.  I did manage to hook up two more friends on their first BH's.  Sometimes that is just as much fun as catching them yourself.
