Even the big ones are good (I've tested up to 32#), at least the way I usually cook permit.  I cut them into "permit fingers" about 3/4' thick/wide and about 4-5" long, moisten with olive oil, season with fresh ground pepper, Adobo (Latin seasoning which contains salt), and a bit of cayenne pepper, then dust in corn flour and then saute them on MH heat (turning a couple time) until crispy on the outside.  Serve with some spicy guacamole, corn & bean salad, and cole slaw.
