*Two uncooked fillets of a medium pompano.
*Half red onion
*Half red bell pepper
*One whole tomato, squeeze the seeds and juice from the tomato
*Half raw seeded jalapeño (optional)
*Four table spoons of minced Cilantro
*Juice of a whole Lemon
*One table spoon of olive oil
*Salt and pepper to taste.

Cut blood vein out of raw fillets and remove or cut away any bones. Dice pompano into small pieces.

Finely mince all other ingredients. You can also use a food processor by pulse ingredients a couple a times. Don't mince to much, you want the Ceviche' chunky.

Mix ingredients together and chill. Serve with your favorite crackers.

Tip: Soak the diced pompano in a zip lock baggy with fresh squezzed lime juice for an hour before adding to the vegtable mix.

I made this tuesday but used the whole jalapeno. It was killer I liked the pompo chunky. Wife wants to catch more pomps now Thanks for the recipe. Terry

I've been making mine chuncky also, per my Wife's instruction. She also likes some peeled and diced cucumber. Here's one of my latest batches.
